In the Kitchen with Maija | healthy oat cookies

Hey guys, today is bank holiday Monday and I'm currently staying with my cousin for a couple of days. We decided on a 'do nothing at all but watch movies' kinda day, waking up at about ten this morning and only actually getting out of bed an hour later. Yet this morning we got sudden inspiration to do some baking also we came up with a new series for my blog called 'In the kitchen with Maija' where I will upload recipe's which I have discovered and am enjoying (most likely healthy recipe's).

Recently I have been following a rather healthy diet plan, yet as I am having a couple of girly days with my cousin I told myself I am allowed to slack a little bit off this 'healthy eating'. Nevertheless both my cousin, Zoe, and I decided on baking a healthy(ish) treat which would still be considered a treat yet just a little healthier.  

We looked around at a couple of recipes until we found this one which is oat cookies with dark chocolate chunks. 

oats- 2 1/2 cups
all purpose flour- 1 cup
whole wheat flour- 1 cup
brown sugar- 1 cup
baking powder/soda - 1 teaspoon
salt- 1/2 teaspoon
melted coconut oil- 1 cup
2 eggs
vanilla (essence)- 2 1/2 teaspoons
dark chocolate chunks- 1 1/2 cups

step 1. preheat the oven to 360' (gas mark 4-5) and grease a baking tray using coconut oil.

step 2. using your mixing bowl, start off by adding your 2 1/2 cups of oats 

then add 1 cup of both average flour and whole wheat flour

next add 1 cup brown sugar, your 1/2 teaspoon of salt and 2 1/2 teaspoons of vanilla essence

and lastly add both 2 eggs and melt down your coconut oil and add it to the mixture

once all these ingredients are added to the bowl use an electric mixer and mix until all the ingredients hold together. Once your 'dough' looks like the image below add your 1 1/2 cups of dark chocolate chunks and mix them evenly into the oat mixture (you can use any kind of chocolate but obviously dark chocolate is less processed therefore adds to the 'healthyness' of the cookie).

step 3. spread out your mixture onto the baking tray which you greased earlier and place the tray in the oven for 20-25 minutes. 


step 4. After the time is up remove the tray from the oven and leave to cool for 15-20 mins. After cut the oat cookie 'slab' into small 'snack size' squares.

step 5. And now... ENJOY!

V&A (Victoria and Albert) Museum & Productive Sundays

hey guys, I don't know about where any of you guys live but today in London the weather was absolutely beautiful, I'm pretty sure at 24'c at its highest today  has been the hottest day of the year so far. Unlike most sundays where I end up watching the day pass by, I can honestly say today has been a pretty productive day. 

For a girl who normally sleeps in rather late in the mornings, I was very impressed with myself when I woke up at 9 am this morning. I honestly don't like 'lay ins' as I always feel as if I've wasted the day away. Anyway so my dad and I went for a early lunch at a local restaurant where I tried sushi for the first time! I have to say I think my favourite was the avocado one. So after that I felt as if I had eaten a whale and decided to take advantage of the perfect weather and went for a run around my block. I then came home and for some reason decided to jump on my trampoline for half an hour (I honestly didn't plan to jump for that long, but I think I just got carried away with the fun of it, hehe). so after that I 'facetimed' my cousin who lives in a different country which was super nice, then had a super light mozzarella salad for dinner and am now snacking on some strawberries and yes, green tea. So I can sigh in contempt at my not so boring sunday. 

Anyway back to the main topic of my "more fashion related post" which I promised in my previous post. 

A couple of weeks ago my mum and I took a trip to London to visit the Victoria and Albert museum, as I really wanted to check out the fashion exhibitions. We missed out all the sculpture section (which were nevertheless amazing) and walked straight to the 'Fashion over the years'. 

The first dress I saw literally stuck as one of my favourites throughout the entire day.

But if you haven't already guessed this is Chanel. 

I fell in love with this outfit at first sight.

These next three pictures were, as you can see Christian Dior, for some reason I fell in love with this section. 

Another section I saw was Mary Quant. Her clothing was so funny with the 'funky' patterns and colours. 

When I showed my grandma these pictures she told me that she actually had a Mary quant black & white checked mini dress which I found super cool. 

At the moment at the V&A there is an exhibition on 'The glamour of Italian Fashion 1945-2014' which is still on until July 27th. It was absolutely amazing, yet there was unfortunately a rule against photography which kind of ruined my plans of showing you guys but never mind they obviously had their reasons behind the rule.
It was honestly so crazy seeing all the pieces, everything was so beautiful and elegant. It was fun comparing clothing from decades ago to clothing that is more recent to this day that current celebrities have worn on the red carpets. 

The smile on my face didn't leave the entire day yet it grew even bigger when we walked into the 'gift store' which had probably every fashion book you could think of. I have no regret in the fact that I spent quite a bit of time wondering around and reading all the books. I got 'The little dictionary of Fashion' by Christian Dior, as I had been eyeing it for quite while. 

I had a lovely day, after my mum and I had walked down to harrods to have a browse around where I saw every single bag I ever want, it was torture, haha. 

Anyway, only one week until I have a week off of school for half term! Lets hope the days go quickly.
